FAQ
How should I store my chocolate rolls and how long will they last?
Our chocolate rolls maintain peak flavor and texture for 6 weeks at room temperature, but can easily last two years when frozen! If you're not planning to enjoy your chocolate within 6 weeks of purchase, please store it in your freezer.
When you're ready to enjoy, simply take it out of the freezer and wait 15-20 minutes for it to thaw, depending on your ambient temperature. Or, enjoy Diego’s frozen!. Once thawed, we recommend consuming within 6 weeks for the best experience. Yes, you can refreeze if needed.
Please note: if you are in a very humid environment and want to maintain the packaging carefully, place the frozen chocolate in the refrigerator for a few hours before removing it to room temperature. This gradual thawing process will reduce the chance of condensation.
What should my chocolate look and feel like?
Each hand-rolled chocolate should have a smooth, slightly soft texture at room temperature. Our rolls with milk are softer than those without. You might occasionally notice white spots or a light gray film on the surface – this is called 'bloom' and is perfectly natural when chocolate experiences temperature changes during shipping. Bloom doesn't affect the taste or quality at all; it's simply the cocoa butter rising to the surface.
The rolls might feel slightly soft if your room is warm (above 75°F/24°C). This is normal for real chocolate that doesn't contain artificial hardeners. If your chocolate arrives feeling too soft, simply place it in the refrigerator for 30 minutes before handling.
The texture and appearance of our chocolate reflects its natural, minimally-processed nature – each roll is uniquely shaped by hand, so slight variations from the photos are normal and reflect the artisanal care we put into every piece.
What about dietary restrictions and sampling options?
While our chocolate-making facility handles both milk and non-milk products, we maintain strict separation protocols. Each product page clearly indicates whether a roll contains milk. Please note, we do not use gluten, soy, or artificial additives in our facility. However, our cacao is processed in a facility that also processes tree nuts.
We use only certified organic cacao for chocolates sold in the USA. Currently, our chocolates are not certified kosher or halal, though our ingredients and processes align with many dietary requirements.
